The down side: It is tough and takes long to cook.
The up side" It’s fall off the bone" with great taste and cost less.
The answer: Use a slow cooker.
For a 'hefty' serving of 4 or 6 you'll need:
4 pounds (2 kg) beef short ribs (may sound like 'plenty' but remember that a lot of
it is bone)
1 large onion, coarsely chopped
1/4 cup flour
1 cup of Original BBQ sauce
1/4 cup honey
1 tbsp. dry yellow mustard
1 level tsp. salt
1 level tsp. black pepper
2 cloves garlic (crushed)
1 tsp. finely chopped Scotch Bonnet hot pepper (Optional)
Method:
[a] Place ribs in slow cooker; top with onions.
[b] Mix the remaining ingredients, then pour it over the short ribs.
[c] Cover with lid
Cook:
On LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
[1] Without turning off the slow cooker, use a perforated spoon and remove short ribs, and set aside.
[2] Use a oil strainer and skim fat from sauce.
[3] Return the ribs to slow cooker in the sauce.
[4] Stir gently until evenly coated.
You're done.
Serve with cooked vegetables and mashed potato or rice.
