June 2008 Chefboog's MEATLOAF (two versions)


SPECIAL MEATLOAF
For a serving of 8, you'll need:
2 Lrg. eggs    --  Beaten
2 lbs. ground beef, or meat of your choice
1 pkg. Stove Top stuffing mix for chicken
1 tin Cream of Mushroom
1/2 cup chopped fresh basil
1 tsp. thyme
2 X 1/4 cups of your favourite B.B.Q. sauce
(Scotch Bonnet pepper optional)
1 Level tbsp. salt & pepper mix
1 tbsp.  Italian dressing

Method:
In a bowl, combine and mix the above ingredients, saving one of the 1/4 cup B.B.Q. sauce for later,    then form (shape) mixture into a loaf, like that of a bread, and now top it with the remaining 1/4 cup of sauce.
Cooking:
Place loaf in a baking dish, on top of a layer of cornmeal, and bake uncovered in a pre-heated oven @ 350F. for about one hour.
( If you have a meat thermometer, insert it to the center for a reading of 160F)

Serve sliced with creamed potato and the following roasted vegetable side dish.



Chefboog's MEATLOAF version 2

For a serving of six, you'll need:

1 1/2 ib. lean ground beef (or meat of your choice)
1 cup of milk (or coconut milk)
1 tsp. Worcestershire sauce (or Teriyaki or light soya sauce)
1 tsp. chopped fresh  or,
1/4 tsp. dried sage leaves. (or ditto for basil)
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dry mustard
1 tbsp. butter
1 clove garlic (grated)
1 large egg
3 slices bread (torn into small pieces)
1 medium onion (chopped)
1/2 cup ketchup (or chili or BBQ sauce)

Method:

1/   In a mixing bowl, combine all ingredients,except the ketchup

2/   Spread the mixture in an ungreased 8X4 inch  or, 9X5 inch loaf pan

3/   Spread the ketchup evenly over top

4/   Bake in an pre-heated oven of 350F.  for 1 hour and 15 minutes.

5/   Drain the meat loaf

6/   Let stand for 5 minutes, before removing from pan.
